Our Process

Blue Agave

We use 100% fully mature Agave Tequilana, also known as, Blue Weber Agave. What is unique to us is that we blend 50% highland agave with 50% lowland agave which highlights the best qualities and a true expression of the entire tequila region.

 

Harvest

Our Blue Weber Agave is harvested only after reaching 7-10 years in maturity to achieve the proper bricks for highest possible quality. We then bring our Agaves from the Hills (Highlands), and Valle de Tequila (Lowlands) to our facility in the city of Tequila, Jalisco. Many producers are using agaves that are not mature and under 4 years of age.

 

Bake

Our baking process is a time tried traditional method. It is probably best described as a caramelization of the agave, just as you would for caramelized peaches or bananas. These agaves are fired for up to 60 hours in brick ovens bringing out the natural sugars and juices to make this pure agave nectar. This process is much more expensive than steaming the agave but the caramelization is key to a true tequila with the best qualities and properties.

 

Crush

The roasted agave hearts are then crushed and pressed to remove any remaining juices.

 

Ferment

The roasted juices from the agave are then placed in large fermentation tanks and yeast is added to convert the sugars into a low-alcohol agave wine for up to 48 hours.

 

Distill

Our tequila is double-distilled in traditional copper “pot stills” to get the best, most authentic quality in one the most important processes. Our tequila is distilled to 110 proof and then we use ancestral volcanic water from the valley to reach the required 80 proof to bottle.

 

Cold Filtration/Aging

Our final product is cold filtered for perfect clarity and purity. Regarding our aged products, our Reposado tequila is aged 8-11 months and our Añejo is aged 18-36 months. In our aging, we are not trying to achieve a specific length of time in the barrel, but a specific and consistent color and quality which we call aging to perfection.

 

Bottling

Our bottles are a work of art to pay homage to the true craft of the Mexican artisans whether in ceramics, hand-blown glass, or fine tequila production. Our bottles are filled in the town of Tequila Jalisco, at the estate’s distillery and go through a final multiple point quality check with the bottles and the final amazing liquid. Enjoy…Salud!!
